If my employee quits and demands that I pay him his final wages immediately, must I?

No. Under Minnesota law employers are required to pay most employees their final wages within 24 hours, but only if the employee is fired by the company and then demands immediate payment. Where the employee voluntarily quits he isn’t entitled to make this demand and must wait until the next regularly scheduled pay day, unless the company elects to pay him earlier.
